Subjects of the Austro Hungarian empire, the Endrici family arrived in northern Italy in 1885 and established a formidable estate at the foot of the Dolomites. Enthusiastically biodynamic, they offer an impressive array of wines including this unique style from the region39s Teroldego grape. Fabulously rich, intense bramble fruit and black cherry flavours were achieved by adding wine made from grapes dried to raisiny succulence. Hack off some chunks of Parmesan for this.
